Masa (or Waina) is a beloved Northern Nigerian delicacy that perfectly bridges the gap between a savory pancake and a crumpet. Made from a special type of locally grown white rice that is soaked overnight and naturally fermented, the batter is poured into a customized, multi-indented clay or cast-iron pan (similar to an Aebleskiver pan) and fried to golden perfection.
